Ice Cream Bark, are we starting trends?
This bark means business. With a chewy date base, a swirl of peanut butter, and a generous layer of Ben & Jerry’s Bohemian Raspberry, it’s the kind of treat that hits every craving at once. Finished with a crackly chocolate shell and a sprinkle of peanuts, it’s the perfect balance of sweet, salty, and oh-so-satisfying.
INGREDIENTS:
- 335g dates, pitted
- 1–2 tbsp peanut butter
- 1 tbsp chopped peanuts

1 tub Ben & Jerry’s Bohemian Raspberry Non Dairy Ice Cream
- Vegan dark chocolate, melted (for topping)

Line a baking sheet with parchment paper. Flatten the pitted dates into a single layer using the bottom of a glass or another baking sheet.

Spread a thin layer of peanut butter over the date base, then sprinkle with chopped peanuts.

Let the ice cream soften slightly, then spread it evenly over the peanut layer. Smooth it out with a spatula.

4. Freeze for 2–3 hours, or until firm.

Melt the vegan dark chocolate in a bain marie (or gently in the microwave), then pour it over the frozen layer. Return to the freezer for another hour.

Once fully frozen, chop into squares and serve immediately. Store any extras in the freezer - if there are any left!
