Brownie Ice Cream Pops

Your cake pop just got a decadent chocolate upgrade! With soft brownie on the outside and indulgent Brookies & Cream ice cream on the inside, it’s a brownie lover’s dream that’s guaranteed to satisfy your sweet tooth.

    Melt the milk chocolate in a bowl and set aside.

    Place your brownies in a bowl and smush them with your hands until they become a soft and malleable texture.

    Take out a ball of softened brownie (around 60g) and flatten to a round thin disc using the palm of your hand.

    Next, scoop out one tablespoon of ice cream and place it in the middle of the brownie disc.

    Carefully close the brownie around the ice cream to create an enclosed ball.

    Working quickly so as not to let the ice cream melt, dip a cake pop stick into your melted chocolate a few centimeters, then push it into the brownie ball. Repeat until your smushed brownie mixture is gone. Place the pops on a tray in the freezer to set.

    Once the balls are firm to touch, dip them in the melted chocolate. After a minute or two, the shell will be set enough to drizzle with white chocolate and cookie crumbs.
